Clearly defining the Abstrax pistachio profile was time consuming, to say the least. The nuts themselves increase in sweetness as they ripen. This natural variance results in a spectrum of flavors relative to age that can be reasonably applied to testing procedures. But we found the best, and we put it on sugared ice for the people.
